We are delighted to sell 'Garryhinch Wood' Organic Exotic Mushrooms. They are all grown in Garryhinch, Portarlington Co.Offaly. We sell: Nameko, White Beech, Maitake, King Oyster, Yellow & Grey Oyster and Shitake mushrooms. They have many health benefits and taste so, so good! I love them in omelettes and risottos but there is so much you can do with them. Just fried in a little butter and garlic....mmmm. If you haven't already, make sure you try some next time you come to the farm shop! 😊
Rhubarb, Rhubarb!!!

Our crop of glossy red rhubarb is really taking off! I've had a go at making some rhubarb and ginger jam. Here's the recipe if you want to try it:
700g chopped rhubarb, 500g jam sugar, juice of one lemon and 1 tablespoon of grated fresh ginger.
Put all the ingredients into a large pan, toss well and leave to marinate for a couple of hours.
Then place the pan over a medium heat and stir everything until the sugar is dissolved. Reduce the heat to low and continue to cook for 20 minutes (if you make double the quantity let it cook longer until you feel it start to thicken. It does thicken a bit more when it cools down). After this, remove from the heat and let the jam cool completely before pouring it into sterilised jars.
